Honeydew
Honeydew is a sugary substance secreted by certain small insects that feed on tree sap (in our case oak trees). The bees collect it and produce honeydew honey. It has a dark color, a very dense consistency and does not crystalize. The taste is sweet and vaguely reminiscent of caramel. It has anti-bacterial and soothing qualities and is a great remedy for cough and sore throat. Unfortunately it isn’t available every year, ask for more information before ordering and stock up when it is available.
